By the 1920s, the Summit Springs Hotel was being operated as a Jewish establishment, as Jews were restricted at nearby Poland Springs Hotel. August, 1917 "Mrs. Louis Schilt, who has been at the Summit Springs Hotel at Poland, Maine, is now on a trip to the Thousand Islands, Lake Champlain and Saratoga, and later will visit her daughter, Mrs. Simon Katz, in Philadelphia."
